Mr Slater allegedly swore at police and became louder and louder, attracting the attention of television cameras that were there to film the fight.
Mr Slater accused the officers of upsetting his young son.
"You made my boy cry... how dare you," he said.
The officers arrested Mr Slater for disorderly conduct and using obscene language at a public officer.
He consequently missed the fight in which the IBO cruiserweight world champion beat American BJ Flores in a 12-round slug-fest.
Mr Slater became one of the best-known bikies in the state after he was arrested, and later acquitted, over the car bomb assassination of former detective Don Hancock.
Among the 4000-strong crowd watching the fight were underworld figures, Eagles and Dockers footballers and other famed sportsmen such as former cricketer Justin Langer.
